Prime Rib soup!

Just had some prime rib soup a few days ago. It's simple, like a beef soup with carrots, onions. and celery, but the quality of the meat makes it oh so special and flavor is dialed up ten times.

Haleiwa Joe's is a restaurant here which has 44oz prime rib, so we mostly get a huge bone as leftovers and take it home to make soup! Lotsa meat remains on the bone, so it comes off the pieces cut into a small size.

Once you try this... plain beef stock with mirepoix won't cut it.

Yeah, prime rib is marbled enough it would make good soup/stew. I tried making beef and barley soup with sirloin or something once, something that wasn't marbled well, and it didn't come out well. I like to use chuck stew meat and cook it in the crockpot for hours.
